Step 1
Whisk eggs, oil and sugar in a bowl. Fold through carrots and walnuts. In a second bowl, whisk together flour, baking powder and spices. Add to wet mixture and fold until just combined.
Step 2
Heat pie maker. Spray or brush cooking plates lightly with oil. Scoop 1/3 cup measures into plates, close lid and bake for 8 minutes until a skewer inserted into the center comes out clean. Remove and repeat with remaining batter.
Step 3
For icing, whisk together cream cheese and butter until smooth. Add sifted icing sugar and whip until fluffy. Whisk through vanilla.
Step 4
To assemble cakes, use a sharp serrated knife to slice a thin layer off the rounded top off four of the cakes. Spread a thick layer of icing over the cut edge then top with an uncut cake. Ice the top of the double layered cake and, if you like, ice the sides as well.
Step 5
Sprinkle with some extra chopped walnuts.
