Step 1
Place 1 sheet filo on a flat surface. Brush with a little of the melted butter. Top with another sheet filo. Repeat layering with 3 more sheets of filo. Cut filo stack in half horizontally. Cut each half crossways into 12 strips (you’ll have 24 strips in total). Cover strips with a clean damp cloth.
Step 2
Preheat pie maker. Brush 3 filo strips with a little butter. Arrange strips in a crisscross pattern. Place into the pie maker (see note).
Step 3
Place 1 teaspoon pizza sauce in the base of tart. Sprinkle with 1 tablespoon of the bacon, three pieces pineapple, a pinch each of the capsicum and green onion and 1 tablespoon of the cheese. Fold over excess pastry to partially cover filling. Repeat with 9 filo strips and more fillings to make another 3 tarts. Brush pastry with a little butter. Close lid. Cook for 10 minutes or until tarts are golden.
Step 4
Transfer tarts to a wire rack. Repeat with remaining filo strips, fillings and butter to make 8 tarts. Serve warm or cold.
