Step 1

Cut the stem of the Scotch bonnet peppers, cut into 4 pieces and keep the seeds.

Place the peppers, cabbage, carrots, onions, peas, cloves, salt, and peppercorns in a jar, then add the vinegar.

Close the jar tightly and let stand for at least 24 to 48 hours before using.

Once opened, the pikliz can be kept in the refrigerator for several months.
