Pimiento cheese may not be one of the typical ingredients you reach for when you’re ready to roast a chicken, but hey—don’t knock it until you’ve tried it. This cooking method produces an insanely succulent, juicy bird with golden-crisp skin. You could also apply the same technique to individual skin-on thighs or breasts, as opposed to roasting the whole chicken. 

Pimiento Cheese Roasted Chicken

(3 1/2 chicken

1 ¼ spicy pimiento cheese

kosher salt

black pepper

Preheat oven to 375°F. Spread pimiento cheese evenly under skin and over breasts and thighs of chicken. Sprinkle with salt and pepper.


Place on a lightly greased rack set in a rimmed baking sheet. Roast in preheated oven until a thermometer inserted in thickest portion of thigh registers 165°F, about 55 minutes. Let rest 10 minutes before slicing.


I'm rating this recipe the way I'd do the measurements. 1 1/4 cups pimiento cheese, 1 tsp. salt or to taste, 1/4 tsp. black pepper or to taste. Can't wait to try this different way of roasting a whole chicken! Happy cooking from the Bluegrass state of Kentucky! :)

Ok, so read the recipe. Think about how much cheese you can stuff under the skin of your chicken and go from there. Even if there was a unit given, I would go by "feel" anyway. Deems like more than tablespoons, less than cups. Also depends on the size if the chicken.

1-1/4 what of pimento cheese?  Cups, teaspoons, tablespoons?  Certainly isn't my Mom's pimento cheese which I have been making for 60 years (just whipped up a batch). Everyone who has this proclaimes it the best they have ever eaten.  Ladies I know beg me to make them some and I do.

Looks intriguing, but what is the correct measurement for the pimiento cheese:1 1/4 cup, pint, quart, gallon?
