Step 1
Pour one tablespoon of avocado oil into a large skillet, then put the skillet on medium-high heat. When hot, add the cubed chicken, then sprinkle with salt and pepper. Cook the chicken for about 4 to 5 minutes.
Step 2
Add broccoli florets, chopped red bell pepper and pineapple pieces to the skillet. Stir and continue cooking for 5 more minutes or until the chicken is cooked through and the vegetables are soft.
Step 3
When chicken and veggies are cooking, you can prepare the sauce. Combine together soy sauce, pineapple juice, sesame oil, honey, minced garlic, ground ginger, and cornstarch into a small mixing bowl. Using a whisk, mix until thoroughly combined
Step 4
Add the sauce to a small saucepan and heat on medium heat. Allow the sauce to come to a simmer. Whisk continuously and cook for about 3-4 minutes or until sauce thickens.
Step 5
Start pouring the sauce over the prepared chicken and veggies. Toss them until they're thoroughly mixed.
Step 6
Serve pineapple chicken over rice if desired. Garnish with sliced green onions and toasted sesame seeds.
