Open bottle of sparkling water and pour out about 4 ounces. Stuff add 1/2 of the cucumber slices, 4 mint leaves and juice of 1 lime. Note: I had to quarter the cucumber slices in order to fit them the top of the bottle. I also only used 1/2 lime since my sparkling water was lime flavored. Reseal and refrigerate for at least 4 hours.When ready to serve, add ice to each 8-ounce glass then fill half way with pineapple juice. Add a few slices of cucumber. Pour in sparkling water until filled to the brim. Serve cold with remaining fresh mint for garnish and/or lime and cucumber slices.
