Step 1
Preheat the oven to Grease a 9 x 13 baking dish and set aside.

Reserve 1/4 cup of the crushed pineapple and set aside. In a large bowl, mix together the remaining crushed pineapple, flour, sugar, salt, baking soda, vanilla, and eggs. Pour the mixture into the prepared baking dish.

Bake 35-45 minutes, or the cake is until golden brown on top and a toothpick inserted into the center comes out clean. Let cool completely.
Step 4
When the cake has cooled, beat the whipping cream until light and fluffy. Add the powdered sugar and mix to combine. Spread the whipped cream over the cake and sprinkle with remaining crushed pineapple. Refrigerate until ready to serve.
