This fluffy pistachio salad is a real treat since it's creamy but not overly sweet. It's easy to mix up, and the flavor gets better the longer it stands. It's perfect for St. Patrick's Day, served in a green bowl.

Pistachio Mallow Salad

carton (16 ounces) whipped topping

(3.4 ounces) instant pistachio pudding mix

green food coloring, optional

(20 ounces) pineapple tidbits, undrained

This is a favorite in my family. My Nana used to tell us that it was called “Watergate Salad” because it was invented at the Watergate Hotel.

This stuff is wonderful, however I do not use cool whip (I just make my own homemade whipped cream).  Also I have to substitute something for the pineapple because my husband detests pineapple.  I usually use chopped up canned freestone peaches.  I use whatever nuts are cheaper at the health food store, usually walnuts and I've even used pecans which were wonderful in this dish.  In my neck of the woods we called this Watergate Salad.  Some of the ladies added chopped marischino cherries but I didn't because we don't like them!  Does anyone have any other suggestions for a fruit I could possibly substitute for the pineapple?

Always knew this as Watergate salad as well, but mu recipe also has coconut in it. YUMMO!!

I've been making this salad for years!  It's always been called "Fluff".  I like to use colored marshmallows for extra color.  So quick and easy.  Always on the table for Thanksgiving and Christmas.

Ah,  good old Watergate salad.  Been making this for decades. Old recipe but good.

Tip:  mix the pineapple and the pistachio pudding mix together first.  This will ensure that there aren't any pudding lumps!  Then add in the Cool Whip; it helps if you leave the CW on the counter for maybe twenty to thirty minutes first so it is easier to stir.  Then add marshmallows and refrigerate.  We love this recipe, too!  It has been a family recipe for years and years, and I'm so glad it is here!  :-)

I love this easy recipe, my kids love it just as much! It's a Holiday favorite for sure!

My grandma made this every year at the holidays and she passed away last christmas so I made this for my dad for thanksgiving and it brought back so many memories for us!

I have been making this "salad" for years and my children and grandchildren look forward to it as part of any dinner. My youngest granddaughter calls it "mistachio" so now that is our endearing term for this favorite recipe. We love all of the pistachio recipes from Taste of Home. I do agree with Imdelzercox, mix the pudding and pineapple before adding the other ingredients.

This is so good. I added a can of cocktail fruit with half the juice and used crushed walnuts as a topping... absolutely delicious!

This is an easy side dish to make for picnics and the kids eat it up.

I use to make this back in the Nixon era and it was called Watergate salad, I have no idea why. I had forgotten about it until last year when my adult son asked for it at Christmas. I have started making it again. I pulled it together from memory, not I have the recipe again.

I always make this recipe,I usually add  a container of sour cream to this recipe. So easy and delicious. No need to put nuts and food coloring.
