Pistachio Pineapple Dessert

butter, melted

(8 oz.) package cream cheese, softened

(14 oz.) can Eagle Brand® Sweetened Condensed Milk

lime juice

(4-serving size) package instant pistachio flavor pudding mix

(8 oz.) can crushed pineapple, undrained

(1/2 pt.) heavy cream, whipped

HEAT oven to 350 degrees F. Combine cookie crumbs and butter. Press firmly into bottom of ungreased 9-inch springform pan or 13 x 9-inch baking pan. Bake 8 to 10 minutes. Cool.

BEAT cream cheese in large bowl until fluffy. Gradually beat in sweetened condensed milk, lime juice and pudding mix until smooth. Stir in pineapple. Fold in whipped cream. Pour into prepared pan.

CHILL 6 hours or overnight. Garnish as desired.

Loved this recipe. I used the 9x12 pan and liked the thinner pieces.  I still Overate but smaller pieces helped. : ) 

Made this the other day. Omg its delicious, everyone in my household loved it.

What a crowd pleaser!  Took it to a pot luck party and everyone wanted to take some extra slices home with them.

This was so easy and good.  I used Lora Donna Shortbread Cookies in the food processor and it was wonderful.  Eveny hubby who does NOT like sweets really liked this one.  Thanks Paula as usual for another great, quick and easy treat!!!!
