Step 1

Melt the butter in a frying pan. Add in the onions and pepper. Cook until translucent.

Step 2

Add in the sugar. Cook until soft.

Step 3

Peel, wash and dry the plantain.

Step 4

Cut the plantain into three chunks.

Step 5

Deep fry the plantain.

Step 6

Place one piece of plantain inside the Lemmon squeezer and press. Repeat.

Step 7

In a bowl, mash the avocado with one teaspoon of cajun seasoning. Mix well.

Step 8

Ina bowl, season the unshelled shrimp with the remaining cajun spices and 1/2 tablespoon of olive oil. Mix well.

Step 9

Saute the shrimp in a pan, until cooked.

Step 10

Layer the avocado, onions and shrimp inside each cups. Serve with lime zest.
