Step 1
Bring water to boil in large saucepan over medium-high heat. Whisk inpolenta, reduce heat to medium-low, and cook until thickened, about 3minutes. Off heat, stir in butter, 1 teaspoon salt, and 1/2 teaspoon pepper.Cover to keep warm.
Step 2
Cook sausage in 12-inch nonstick skillet over medium heat untilbrowned on all sides, about 6 minutes. Increase heat to medium-high,add bell pepper and onion, and cook until vegetables are softened, 4to 6 minutes. Add tomatoes, 1/2 teaspoon salt, 1/4 teaspoon pepper, andpepper flakes. Cook until sauce has thickened slightly, about 3 minutes.Remove from heat and stir in olives.
Step 3
Divide polenta among 4 bowls and top with sausage and sauce. Serve.
