Step 1

Preheat grill/smoker to 375°F.

Step 2

Butterfly pork tenderloin.

Step 3

Mix mushroom powder, onion powder, granulated garlic, and parsley. Sprinkle on tenderloin.

Step 4

Layer ham, then cheese on tenderloin.

Step 5

Roll tenderloin into a log.

Step 6

Create bacon weave on plastic wrap. Place tenderloin on weave, seam up. Wrap bacon around using plastic. Secure with toothpicks.

Step 7

Place on a wire rack in preheated grill.

Step 8

Cook until internal temperature is 145°F, bacon cooked.

Step 9

Rest 10-15 minutes before slicing and serving.
