Step 1

Cook rice noodles in a medium saucepan of boiling water for 2 minutes or until tender; drain.

Step 2

Meanwhile, heat oil in a large frying pan or wok over high heat; stir-fry pork until browned. Add lemon grass and garlic, stir-fry for 1 minute or until fragrant. Add combined water and sugar, stir-fry for 1 minute. Remove from heat, stir in lime juice, fish sauce and green onion.

Step 3

Serve pork mixture on rice noodles and serve with fresh coriander, crispy chilli oil and lime wedges.Mince mixture suitable to freeze.
