Step 1

Boil or bake the potatoes and mash them, ensuring you have about 1 cup (140g).

Step 2

In the bowl of your mixer, combine the milk, butter, yeast, salt, sugar, and the egg and mix thoroughly. Add the bread flour, mixing until a dough forms.

Step 3

Knead the dough using a dough hook for about 5-7 minutes until it becomes smooth and elastic.  Alternatively, you can knead by hand for approximately 10 minutes. Form the dough into a ball and place it in a lightly dusted bowl with flour, covering it with a cloth.

Step 4

Let it rise in a warm place for about 45 minutes to an hour, or until it doubles in size. Once risen, punch down the dough and shape it into a loaf.

Step 5

Place it in a buttered loaf pan and let it rise again for about 45 minutes, until it doubles in size.

Step 6

Bake the bread for 35-40 minutes, or until the top is golden brown and the loaf sounds hollow when tapped.

Step 7

Remove from the oven and let it cool slightly before brushing the top with melted butter. Allow the bread to cool completely on a wire rack before slicing.
