Place the potatoes in a large pot of salted water. Bring to a boil and cook until just tender. Drain well, then peel and cut into wedges. Add enough oil to coat the bottom of a large skillet and heat over medium heat. Add the potato wedges and brown on all sides. Meanwhile, combine the mayonnaise, garlic, and parsley until well blended. If needed, thin with a little milk so it is a sauce consistency. Serve the potatoes with the sauce drizzled over them, or toss the potatoes with the sauce to coat. Season to taste with salt if desired. Recipe can be served hot or at room temperature.
