Step 1
Preheat the oven to 350 degrees.

Combine the pumpkin, sugar, oil, egg, and vanilla in a large mixing bowl.

Let the cookies cool on the pan for 2-3 minutes, then remove to a wire rack to cool completely. Store in a sealed container.
