Step 1
Preheat the oven 400F/200C.
Step 2
Using a hand held mixer, mix the butter with the sugar and vanilla extract, if using. Mix for a few minutes until you get a light and fluffy cream and the sugar is fully incorporated into the butter.
Step 3
Unwrap the puff pastry and unfold carefully. Place the dough with the short sides facing you.
Step 4
Spread the cream over the bottom half of the dough.
Step 5
Fold the top of the puff pastry down to cover the cream.
Step 6
Sprinkle the poppy seeds on top of the dough and gently press on them to ensure they stick to the dough.
Step 7
Turn the dough around and sprinkle the sesame seeds on top of the dough and gently press on them to ensure they stick to the dough.
Step 8
Make straight cuts lengthwise down the dough. You should get 6 even strips.
Step 9
Lift each strip and twist twice, then place on the baking sheet lined with parchment paper.
Step 10
Bake in the centre of the oven for 10-15 minutes. Keep a close eye on your pastry as it can really quickly burn.

They are ready when they start to become golden brown and look beautifully fluffy.

Allow them to cool slightly, then dig right in. Serve with tea or coffee and enjoy!
