Preheat the oven to 300F

Line two baking sheet pans with parchment paper and set them aside.

In a small bowl, mix the oil, honey, and vanilla. Using a whisk preferably, mix all the liquids until well incorporated.

Add the rolled oats, salt, cinnamon, nutmeg, and ground ginger in the large bowl. With a spatula, mix all the ingredients until well combined. Add the nuts at this time if using.
Step 5
Pour the honey and oil mixture over the oats and blend well with the spatula or with your hands if preferred.

Spread oats onto the lined baking sheet pans and spread out evenly
Step 7
Bake at 300F for 15-20 minutes until a nice golden brown in a 300F preheated oven. While the mixture is baking it is recommended to watch the baking process as every oven temperature is different. You may also need to add a few more minutes so the mixture could harden a bit more.
Step 8
Allow the mixture to cool completely before crumbling the oats. Store in an airtight container and enjoy.
