Step 1
In a small bowl, combine noodle sauce ingredients. Set aside.

Soak frozen udon noodles in hot boiling water just until loosened. Strain immediately and set aside.

Heat vegetable oil in a large pan on medium heat. Fry sliced breakfast sausages. Cook until no longer pink.

Add green onions and allow these to cook for 20-30 seconds until fragrant.

Next pour in beaten egg. Allow this to cook and then break apart into bite size pieces.

Mix in yu choy and cook until wilted.
Step 7
Toss in udon noodles and add noodle sauce until well combined. The sauce should thicken. If needed, increase to medium high heat to help thicken the sauce.
Step 8
Remove off heat. Garnish with green onions and sesame seeds. Enjoy!
