Step 1
Place your pork chops into a gallon-size bag or baking dish and set aside.
Step 2
In a bowl, whisk together the cold water, brown sugar and coarse sea salt until well combined and pour it over the pork chops.
Step 3
Add the peeled garlic, peppercorns, and fresh thyme. Seal the bag, or cover the baking dish, and place into the refrigerator for at least 20 minutes up to 4 hours.
Step 4
When you're ready to proceed with a recipe, take the pork chops out of the brine, (don't rinse them!) and them dry.
