Prepare the quinoa following packet directions.

Meanwhile, heat the vegetable oil in a large deep frying pan over medium heat. Add the spring onion and garlic. Cook for 1-2 mins or until aromatic.

Add quinoa, soy sauce and sesame oil to the pan. Stir-fry for 3 mins. Add the peas, cabbage and carrot. Stir-fry for 3 mins or until heated through.
Step 4
Divide the quinoa mixture among serving bowls. Top with the fried eggs, tomato and cucumber. Drizzle with the extra soy sauce and sprinkle with spring onion curls and chilli flakes, if using. Serve with lime wedges.
