Mince or press the garlic and chop the onion.

Step 2

Heat the oil in a saucepan over medium heat.

Cook the garlic and onion 4-5 min until lightly coloured and soft, paying attention not to let them burn.

Add the chili pepper then cook 1 min with stirring.

Step 5

Add the frozen vegetables, tomatoes and drained chickpeas.

Step 6

Season with salt and pepper to taste.

Step 7

Cook 10 min over low heat, uncovered.

Step 8

Add water, if necessary, to keep the mixture moist.

Step 9

Adjust the seasoning, then serve.
