Step 1
Rinse the quinces under running water. Then peel and core them and chop into chunks.
Step 2
Place the quince chunks in a large pot with the water. Bring to boil.
Step 3
Reduce the heat and simmer for 30 minutes until the fruit is soft. Stir occasionally.
Step 4
Line a colander with cheesecloth and place it over a large bowl. Pour the contents of the pot into the colander and let drain overnight.
Step 5
Pour the juice into a pot and bring to a boil.
Step 6
