Step 1

Preheat your oven to 170°C (fan-forced). Line a 20 x 30cm slice tin with baking paper.

Step 2

Add the olive oil to a small pan and cook the bacon, onion and garlic over a moderate heat until the onion softens.

Step 3

Prepare the vegetables and place them in a large bowl with the eggs, milk, spelt flour, seasoning and ½ cup of cheese.

Step 4

Add the cooked bacon, onion and garlic and mix well to combine.

Step 5

Pour the mixture into the tin and top with the remaining grated cheese.

Step 6

Cook for 30 minutes or until the slice is set in the middle.

Step 7

Grate the cheese (cubed small), 10 seconds, speed Set aside in a small bowl.

Step 8

Add bacon, onion and garlic to bowl. Chop 5 seconds speed Add the oil and saute with MC off, 3 minutes, 100, speed Set aside in a small bowl.

Step 9

Place roughly chopped vegetables into the bowl. Chop 5-8 seconds, speed 5 or until grated. If you grate your veggies very finely and they release a bit of liquid, give them a squeeze in a cloth to remove some moisture.

Step 10

Tip bacon mixture back into Thermomix bowl, add the remaining ingredients except ¼ cup of grated cheese. Mix on Reverse, 15 seconds, speed 3.

Step 11

Pour the mixture into the tin and top with the remaining grated cheese.

Step 12

Cook on a low shelf in your oven for 30 minutes or until the slice is fully set in the middle.

Step 13

Re-heat in a low oven until just hot.

Step 14

Store in an airtight container in the fridge or freezer.
