Step 1
Stir together water and agave nectar. See notes for sugar-free options. Stir these together until well-combined. Refrigerate to chill while you make the rest of the mojitos.
Step 2
Place the raspberries, lime juice, lime wedges, and mint in a cocktail shaker or distribute them between the two serving glasses.
Step 3
Use a cocktail muddler to gently press the mint a bit (referred to as muddling). This breaks down the mint and lime to release those flavors into the rest of the beverage. Just don't muddle too much — we don't want a bunch of tiny pieces of mint throughout the drink.
Step 4
Add some of the simple syrup and ice to the cocktail shaker and give it a good shake to chill the liquids.
Step 5
Pour the cocktail mixtures evenly into two large glasses. Fill the glasses with club soda.
Step 6
Garnish with lime slices, fresh raspberries, and sprigs of mint. Serve immediately.
