Step 1
Prepare the Well Nourished Raw Chocolate as directed, adding in the coconut oil and almond butter with the cocoa and sweetener and stirring until very smooth and well combined.
Step 2
Pour half of the chocolate into a loaf tin and put into the freezer for 5-10 minutes or until partially (but not fully) set.
Step 3
Sprinkle over ⅔ the raspberries and ⅔ the pistachios. Pour the remaining chocolate over the top and put back into the freezer, again for 5-10 minutes or until partially set.
Step 4
Sprinkle the remaining raspberries and pistachios over the top of the partially set chocolate and place back into the freezer until completely set, approximately 20 minutes.
Step 5
Cut the rocky road into slices or squares.
Step 6
Store in the fridge in an air tight container until ready to eat. The rocky road can be stored in the fridge for up to one week or the freezer for up to three months.
