Select the BROWNING function, add the oil and allow to heat. Add the aubergine and stir regularly for ~3 minutes until softened.

Add the courgettes, peppers, onion and garlic and stir for a further ~3 minutes, then press CANCEL.
Step 3
Tear up the basil and add half, along with the sugar, vinegar and tomatoes.
Step 4
Put the lid on and close the pressure valve then select the STEW/SOUP function and adjust the time to 3 minutes.
Step 5
When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
