Great on any Mexican dish. I use any leftover cheese sauce to make enchiladas.

Real Nacho Cheese Sauce

butter

cornstarch

½ cup milk, or more as needed

Cheddar cheese

cream cheese

taco seasoning mix

hot pepper sauce

Melt butter in a saucepan over medium-high heat. Whisk in cornstarch until paste forms, 30 seconds to 1 minute. Whisk in milk gradually until smooth, 1 to 2 minutes. Simmer until thickened to sauce consistency, about 2 minutes.


Whisk Cheddar cheese, cream cheese, taco seasoning, and hot sauce into milk mixture until smooth, 1 to 2 minutes more. Add more milk as needed for desired consistency. Keep warm until ready to use.


Cornstarch gives a strange aftertaste and it dose not give that velvety, shiny, silky look and feel. Tried with potato starch and was a bit better in taste but same texture, then tried with sodium citrate and it was the best of all, also added a bit of roasted mustard seeds along with the taco seasoning mix.

Because of allergies, we changed the corn starch to arrowroot! It work fine, but I am wondering if halving the amount would be better!!!

We also have made this with four cheese Mexican cheese and the doubled the hot sauce we had in the house to make it more flavorful... It was not hot at all, just made the flavors blend well. I also nearly double the milk to make it the right consistency.

I often wonder how something so easy can taste so good. I used sharp cheddar cheese and this turned out perfect. No doubt this will go great on just about anything, not to mention that it's addictive.

This was really easy and quick to make. I used NY Extra Sharp cheese. I grated it myself. Make sure you whisk it over low heat until very smooth. I added about 1 teaspoon each of finely chopped red bell peppers and finely chopped jalapeño peppers because I prefer a mildly spicy cheese sauce and I like the added colors, too.

Absolutely delicious! Followed instructions with a tweak (subbed Almond Milk) and it was great. Took a little longer to become smooth likely due to the milk choice but was great overall. Reheating note, you may need to add more milk to get the smooth consistency mine was a bit lumpy when I reheated

I add 3 times the milk and cheese.it's creamy.bring on the chips.

I needed a cheese sauce for making Mac n Cheese.... it was perfect!! I only left out the hot stuff because my husband doesnt like spice

I totally agree with 'Corbu Johnny'... Sodium Citrate is 'The Answer'!!! I discovered it in a Mac &amp; Cheese recipe. Cornstarch has a strange aftertaste &amp; texture. If you're using pre-grated cheese, it's full of it (to keep it from clumping)! Grate your own, from a block &amp; you'll get MUCH better results!

I used flour instead of cornstarch. I also found it thicker than I preferred &amp; thinned it quite a bit with more milk. For the cheese I used 1/2 pepper jack &amp; 1/2 sharp cheddar. It turned out great...I'll definitely be keeping this recipe &amp; using it over &amp; over!

I didn't have any hot sauce or cream cheese, but I added 1/2 tsp chili powder and about 1/2 tsp of Lawry's seasoning salt. It was a good smooth consistency and came together easily and quickly.

It was good i loved it. I didn’t put in the hot sauce so it had less spice it was great.

Made it to go with breadsticks, they turned out great

We simply did not like it, it had a strange consistency and no flavor.

A little on the mild side, even with extra sharp cheddar.  But it is a good starting point.

Turned out awesome! Had to add more liquid though than what was called for too make it more of a cheese sauce. It was very goopy at first. Also turned up the heat for a bit and that helped.

II added mild peppers in stead of jalepenos

I made a few changes. I used jalapeno powder instead of hot pepper sauce &amp; I had herb &amp; garlic cream cheese so I used that. I added sauted chicken with chipotle sauce which turned out amazing

Excellent, best one I've tried yet. I think it needs some salt. Maybe just get saltier chips. Ended up using about 3/4 c. milk. Maybe more. But that's the beauty of this recipe, you can adjust it to the consistency that you like. I also like that it doesn't taste pasty like the recipes with flour to thicken it.

i did use some homade salsa instead of the hot sauce and taco seasonings.
Take your time and prolly triple the milk in the end

Needed more cornstarch than the recipe stated but loved it. My child didn't want the hot sauce but the taco seasoning still made it taste like there was a kick.

It was okay. It didn't have the "nacho cheese" flavor that I was hoping for. I used 2T flour instead of the cornstarch and ended up using a lot more milk. We ate it. It didn't go to waste, but I won't be making it again.

As written, the recipe was only a 3. Of course, to some degree this is dependent on the ingredients. If you have taco seasoning you don’t care for, don’t use that in this, because you won’t like it.

Was very good recipe but not your normal nacho cheese taste. Great on tacos or in burritos instead of grated cheddar cheese.

Made mostly per recipe. Used Hot taco sauce so I didn’t add more spice since I wanted my toddler to eat it. Would definitely add jalapeños next time. Served over tator tot, and ground turkey with green onions and tomatoes (plus any hot in some peas forMade an easy dinner.

It turned out great!  I used more milk at the end.

Did not have cornstarch so used potato starch. That being the case, the consistency was grainy and unpleasant. The taco seasoning does not add to the flavor, omit it. I used a shredded Mexican cheese blend because cheddar has a tendency to separate and greasy. Needs some modifications.

I added some extra milk it came out so creamy and tatted amazing with my homeade chips!!!!
