This easy red cabbage salad is full of vitamins. The salad should sit for at least 1 hour to develop its full flavor before eating.

Red Cabbage Salad with Apples

½ medium head red cabbage, shredded

salt

red apples, thinly sliced

white balsamic vinegar

liquid honey

rapeseed oil

Combine red cabbage and salt in a bowl and knead with your hands for a few minutes until cabbage is soft. Mix in apples.


Whisk white balsamic vinegar and honey together in a cup. Whisk in oil. Drizzle over salad, mix well, and set aside for at least 1 hour for flavors to combine.


I made this salad yesterday, seemed the perfect fit with burgers....and it was, fresh, just the right touch of sweet, beautiful presentation, my whole family loved this one.

Made this up thinking that I had balsamic vinegar on hand. Nope! I substituted with red wine instead. Still turned out good! I'll give it another go with actual white balsamic vinegar!

I cut the honey, oil &amp; vinegar to 1/2  to save on calories, plus I added 1/2 large carrot (spiralized) for extra nutrition &amp; color. I juiced a small orange and coated the apple (spiralized) to keep it from turning brown as I don't think that I can eat all of it in one day and added the remainder of the juice to the dressing. Will be having it as a side for Salmon Patties.

Not flavorful enough. Pleasant but kind of a non-player in the meal.

This side dish is delicious, but then I love cabbage. I didn't have the rapeseed oil or the best substitue (sunflower oil) so I had to use olive oil. I'm not sure it made a big difference, but this salad is so beautiful that I'll be making it again with the right stuff. I added just a little bit of green cabbage so make it colorful.
