Step 1

In a pot over medium-high heat, add 2 tbsp of your favorite cooking oil. Sauté mushrooms in oil. Add ginger and sauté one more minute until fragrant.

Step 2

Reduce heat to medium. Add in red curry paste and pour a cup of water into the pot. Stir in flavor packet and coconut milk.

Step 3

Bring broth to a simmer. Pour over cooked noodles in a ramen bowl.

Step 4

Garnish with green onion, cilantro, a soft boiled egg, and a squeeze of fresh lime to taste.
