Marinade chicken in (A) for 30 minutes.In a wok, heat sesame oil and olive oil. Add thinly sliced ginger and fry them until crispy. Set aside the fried ginger strips.Using the remaining oil in the wok, add chicken pieces. Stir fry until the chicken is cooked on the surface.Add red glutinous wine (or rice wine), the remaining ginger and light soy sauce. Cover with lid and let the contents simmer for about 5 minutes.Turn the chicken pieces over with kitchen tongs so that they can absorb the sauce evenly. Add hot water. Simmer with lid closed for another 5 minutes or until the chicken is cooked.
