Pre-heat the oven to 200°C (fan), 220°C, gas mark 7. Throw the washed potatoes into a roasting tray. Drizzle half the oil over the potatoes and toss with a bit of seasoning. Roast for45–50 minutes, giving them a shake if you remember. Once soft, remove. Mix the garlic with the remaining oil, lemon zest and juice. Spoon this dressingthrough the hot potatoes and serve immediately.
