Step 1
Heat an oven to 400 degrees F. (200 degrees C). Rinse and pat dry the split turkey breast.
Step 2
With your fingers, carefully separate the turkey skin from the meat and spread 1 tablespoon of the softened butter under the skin.
Step 3
In a small bowl, mix together the remaining tablespoon of the softened butter, olive oil, dried rosemary, salt, and black pepper.
Step 4
Spread the rest of the butter over the top of the turkey breast and place the turkey breast in a roasting pan.
Step 5
Roast the split turkey breast for 45-50 minutes or until an instant-read thermometer inserted into the center of the breast reaches 165 degrees F.
Step 6
Remove the turkey breast from the pan and cover and and rest for at least 15 minutes. Slice and enjoy.
