Step 1
Heat oven to 450°F.
Step 2
In a large bowl, mix the cauliflower, 2 tbsp olive oil, salt, and 1 5-ounce packet of Haven’s Kitchen Turmeric Tahini Sauce until evenly combined.
Step 3
Line a baking sheet with parchment paper, then place the cauliflower in a single layer on the sheet. Roast for 25-30 minutes until it is tender and browned, stirring once halfway through.
Step 4
While cauliflower is roasting, slice the red onion.
Step 5
In a medium saucepan, and heat 1 tbsp olive oil over medium heat. Add the onion and sauté until translucent, about 3-4 minutes.
Step 6
Stir in the drained beans, kosher salt, chili powder, and black pepper. Turn the heat to medium low and cook for 10-15 minutes, stirring often. Scrape the bottom and sides of the pan as necessary. Add salt to taste.
Step 7
Warm your tortilla with a dry heat, in a pan or toaster oven (not the microwave which will ruin the texture and make it subject to falling apart.)
Step 8
To serve, place a layer of beans in a tortilla, top with roasted cauliflower, and your fav toppings.
Step 9
Serve immediately.
