Roasted Fingerling Potatoes

small fingerling potatoes

garlic, crushed

Extra-virgin olive oil,

Salt and pepper

Spread potatoes out on a cookie sheet. Scatter garlic over potatoes. Coat lightly with extra-virgin olive oil and season potatoes with salt and pepper. Roast until tender, about 20 minutes.

We don't eat a lot of potatoes and red news are usually my choice, but I wanted to try fingerlings for a side with grilled flank steak. I tried this recipe, and was not disappointed. So very easy, followed the recipe exactly, except  baked for 25 minutes. We all loved them, including our dinner guests. Flavorful, crispy, but creamy also. I served with sour cream and chives on the side. Delicious, simple, elegant, versatile.

Love these potatoes. Been making these for quite awhile. Don't know why people are using MINCED garlic since the recipe calls for CRUSHED garlic cloves. READ THE RECIPE PEOPLE!!!

WARNING - do not heat your oven to 500 like the recipe states.  I followed the instructions and ended up with a smoke filled house after only 10 minutes.
