1 French-style baguette (sliced into 1/2" slices)1/4 c. olive oil1/2 lb. mozzarella (sliced)12 oz roasted red peppers (sliced (most jars are 12 oz, I only use about 1/3 of the 12 ounces. jar))parsley (for garnish)

Step 1

Preheat oven to 450-degrees.

Step 2

Lightly brush each baguette slice on each side with olive oil and place on a baking sheet.

Step 3

Bake on the top rack of the oven for 4-5 minutes or until bread is lightly toasted.

Step 4

Remove from oven and place one slice of cheese on each baguette and top with a roasted red pepper slice (you may want to cut the slice in half if it is too long).

Step 5

Top with another small slice of cheese (if you like it cheesy).

Step 6

Place baking pan back in the oven and bake about 2-3 minutes or until cheese is melted.

Step 7

Remove from oven, garnish with parsley, and serve.
