Step 1
Preheat oven to 375° F. Cover a baking sheet with parchment paper (optional for easy clean up). Slice the sweet potato horizontally into 1/2" slices. You should have about 8 slices.
Step 2
Mix the pumpkin pie spice or cinnamon with the coconut oil and then evenly coat each sweet potato with the oil. Spread evenly on the baking sheet.
Step 3
Roast for 20 minutes, or until very tender, flipping once halfway through. Let cool slightly, then cut out shapes with your cookie cutters. Enjoy!
