Step 1

Preheat oven to 350°F.

Step 2

In a medium bowl, mix together the 2 cups flour, 1/4 teaspoon salt, 2 1/2 teaspoon baking powder, and 1/4 cup brown sugar. Cut in shortening until crumbly.

Step 3

Add egg and 3/4 cup milk and mix thoroughly. Press mixture into the bottom and up the sides of 9x13-inch baking dish.

Step 4

Top with chopped rhubarb. Sprinkle gelatin powder over the top of the rhubarb.

Next, make the topping:

Cut 6 tablespoons butter into a mixture of 1 1/2 cups sugar and 1/2 cup flour. Crumble over the rhubarb.

Bake 50 minutes. Serve and enjoy!
