Step 1
Whisk all ingredients except chia seeds in a medium mixing bowl. Once well mixed, stir in chia seeds.
Step 2
Let sit 5 minutes, stir well again and then chill in refrigerator for 30 minutes.
Step 3
Stir together oats, coconut milk, vanilla and maple syrup in a bowl.
Step 4
In a separate bowl, microwave mini marshmallows with 1 tbsp coconut milk for 30 seconds.
Step 5
Add this to your oat mixture and stir well to combine. Let sit in refrigerator overnight. If you don't want to let them sit overnight, simply cook oats in a saucepan over medium low heat until you reach desired consistency.
Step 6
Layer a jar with chia pudding, overnight oats, melted dark chocolate and crushed graham crackers. Enjoy!
