Combine the oil, lemon rind, parsley, salt and pepper. Place the salmon fillets in a large non-metallic bowl and pour over the marinade, turning to coat. Cover and refrigerate for 5 minutes.
Step 2
Meanwhile, mix together the basil, mustard, mayonnaise and 2 tablespoons water until well combined. Set aside. Heat a barbecue hot plate or grill to hot. Oil the surface well, drain the salmon and place on the barbecue. Cook for 3 minutes on each side or until cooked to your liking.
