Step 1

• Microwave rice according to package directions. Divide between microwave-safe bowls or to-go containers.

Step 2

• Drain and rinse beans thoroughly; place in a medium microwave-safe bowl. Stir in half the salsa (save the rest for serving). Microwave until warmed through, 30 seconds. Divide between bowls over rice.

Step 3

• Wash and dry produce. Finely chop tomato. Halve lemon.

Step 4

• Top bowls with tomato and Mexican cheese.

Step 5

• Before serving, microwave bowls until cheese melts, 45 seconds. Dollop with guacamole, sour cream, and as much remaining salsa as you like. Serve with hot sauce and lemon halves on the side (cut lemon into wedges if desired).
