Export 4 ingredients for grocery delivery
Step 1
In a large bowl, combine dry ingredients such as whole wheat flour, all-purpose flour, and salt.
Step 2
Next, add oil and starter along with ½ of the water. Mix and knead. Make sure not to overwork the dough or it will not form the air pockets needed. If dough is not coming together, then add the additional water. My flour needed the entire ¾ cup of water.
Step 3
Put in a bowl and allow the dough to rise– approximately 2-3 hours. Next, punch the dough down.
Step 4
Take a sice of a gold ball, slightly bigger and form a ball of dough.
Step 5
Roll the ball of dough out to be about 6-6 ½ inches wide and about the thickness of two tortillas. Allow them to rest.
Step 6
Next, heat a pan, cast iron or non-stick, on medium-high heat. Too low, the pockets will not form.
Step 7
Cook until the dough puffs up with air. Do not flatten.
Step 8
Remove from pan and set aside– do not stack. Enjoy
