Tried this today....right before I added the garlic, onions and peppers I poured a cup of tequila in the skillet to deglaze it...then quickly added the vegetables.  Then after about 3 minutes of cooking the veges...I added a cup of chicken stock and the juice of 2 limes...simmered it down a bit.  I also served rice with the dish.

I tweaked the recipe a bit. Instead of 2 Bell peppers, I used 1 Bell pepper and 1 Poblano pepper. This makes all the difference! Also it’s better using Pepper Jack cheese.

A question, not a review. Can this freeze? I'd like to make a big batch and enjoy the left overs later on ... Any tips?

Made this tonight and was a big hit all around from my 2 yr old to my husband! Lots of flavor, the chicken was tender! I put it over rice. Will make this often!

Made this last night and it was great! Just served with some tortilla chips.  This recipe is also adaptable, would not matter what color peppers or onion you use or what type of chicken as long as there aren't bones. Will defiently make this again! Thank you for sharing!

It turned out delicious. We topped it with salsa and served it with tortilla chips!

Do not rinse the beans! There is so much flavor in there

I have cooked this about 4 times in the last 4 months for my meal prep delivery service, the customers go nuts over it!
I do add some additional Bell colors and make my own taco seasoning that works better with chicken breast rather than using the much more expensive packets from the shop.
Served on a bed of Mexican rice.

Delicious. Nice and filling, but not too heavy.
Due to the lockdown I looked for a recipe that could use all the canned black beans I have...
It looks so colorful on the plate.
