Heat oil in a 4-quart Dutch oven (or similar) placed over medium heat. Cover and let cook for 25 to 30 minutes, or until the farro is tender but still a bit chewy. In the final minutes of cooking, add in the greens. Cover and continue cooking until just wilted, about 2 minutes more. Serve immediately topped with Parmesan cheese and a side of garlic bread. Store leftover soup in an airtight container in the refrigerator for up to 3 days.
