(30-ounce) package frozen hash browns

salt, divided

pepper

Cheddar cheese

eggs

milk

Cook sausages in a large skillet over medium-high heat, stirring until sausage crumbles and is no longer pink. Drain well.


Prepare hash browns according to package directions, using 1/2 teaspoon salt and pepper.


Stir together hash browns, sausage, and cheese. Pour into a lightly greased 13- x 9-inch baking dish.


Whisk together eggs, milk, and remaining 1 teaspoon salt. Pour evenly over potato mixture.


I needed a recipe to take for a brunch and I had most of the ingredients hand except for milk. So I used half and half instead and sprinkled more cheese on top. I only used 1 lb. of Jimmy Dean regular sausage. It was so good, I had to have seconds!

This ended up baking for 1 hour plus 40 minutes. I attribute that to using uncooked hash browns; precooking removes moisture and would significantly reduce baking time. Next time I will definitely precook the hash browns.

I'm not a big cooking person, so I was pleasantly surprised when several people asked me for this recipe after I brought it to a brunch. However, I only use 1lb of sausage and I added an extra egg, because it seemed pretty milky to me. It was super easy to make, absolutely delicious, and reheats beautifully for days afterwards, which is really nice for busy weekday mornings.

Made this tonight and there were NO leftovers!! I used about 3 cups cheese, only 2/3 of the hashbrowns it called for, only 1 pound sausage, 1 package of diced ham, only 1 1/2 cups of milk, added two extra eggs, half a cooked onion, and a sprinkle of cayenne pepper. Yes i know i changed alot but it tasted really good! And probably wouldve tasted great without the changes! I served with sour cream, green onions and diced fresh tomatoes.Next time I'm adding bacon!

I made this for  Mother's day brunch. I used OreIda Potatoes O'Brien(a no sodium added product) because I wanted to increase the flavor but decrease the sodium for sodium restricted family members.  I also substituted  ground white meat Turkey and added sage, rosemary, thyme and fennel and paprika to boost flavor without salt.   For cheese I substituted a kosher swiss (swiss has less than half the sodium of cheddars) and added a frozen mix of black beans, corn, onion and poblano peppers by C&amp;W.I served it with home made salsa. It was a huge hit. I had 2.5 cups more mix than would fit in my large baking dish so I poured it into a silicone muffin pan. AWESOME breakfasts on the go. Froze well.

I got terrific feedback on this recipe yesterday.  Will definitely do again!  I left the sausage in  chunks rather than crumbled, though.

Sorry so late to the game but yes, I have frozen this after baking. To reheat I have wrapped in paper towels and into the microwave for about two minutes, then wrapped in foil and reheated in the toaster oven

This recipe is good except use less milk and a few more eggs. I also added a cup of chopped kale. Delicious!

I increased cheese, added onion, and a red pepper and mixed all with uncooked hash browns. I used a dozen eggs and 1 cup of milk. Baked at 350 for about an hour and 15 minutes (used a knife to check for doneness). Then sprinkled more cheese and scallions on top and put under broiler to brown. It was delicious! What isn't eaten, I put in freezer containers and pull out when I need a quick meal. It freezes beautifully.

Can this dish be made ahead of time? Like the night before?

I made this recipe following the directions exactly and it came out WAY too watery! I dumped out at least 1 1/2 cups of liquid! I had drained the sausage and cooked the hashbruwns, but it was a disaster! Has anyone else had this problem??

I made it with intention to pop in oven tomorrow morning but left milk out on accident! Can I maybe add two eggs with the milk and pure over it? Will it mix with the eggs I forgot to add milk to?

Please help!  Can this be prepared &amp; frozen to be baked later?  Thanks! Bobbi

I tried this recipe recently because I was craving a good breakfast casserole. This was the simplest in terms of amount of ingredients and preparation time, so I decided to give it a try. My boyfriend and I thoroughly enjoyed it, but we agreed that we would do a couple things differently next time. There were way too many hashbrowns for our liking. They overpowered everything else, so I would definitely do less hashbrowns than the recipe calls for. I also think that it would taste better with tater tots as opposed to hashbrowns, so I am probably going to try those the next time I make this casserole. Finally, we both felt as if adding a couple extra eggs would take this casserole to the next level. I will keep y'all updated on how it turns out! 

Loved this dish! Easy to make and plenty for 2 for breakfast during the work week. I used turkey sausage crumbles instead of pork and used the Oreda Crispy Crowns (about half a bag,cooked them in the oven as directed,then chopped them up) in place of cooking hash brown potatoes as shown in the video..I will definitely be making this again. 

I made this twice already it was a hit. The only thing I would change is add more cheese ( I used 2 -2.5 cups) and cut up some red and green pepper to put on top to add flavour. It is worth making. Enjoy! 

Delicious.  Substituted Trader Joes potatoes and peppers with onions and 3/4lb of sage sausage and 3/4lb of hot Italian.  The sausage was segregated by casserole half to give those who don't like hot sausage a break. We made this while one night while on a fishing trip fishing in Grand Isle LA. Baked this the next morning and 2 adults and 3 teenagers demolished.  It was a very quiet breakfast except for the OMG this is good comments.  The boys wanted it the next day also, but being at the bottom of the delta made it a bit difficult.  I wish I had put some local andouille or cajun italian into it.  Highly recommend this dish.

I am going to make this for a potluck breakfast. I am making one with sausage and one without (for the vegetarians). Should I reduce the amount of liquid for the one without meat?

This is a favorite for Christmas morning at our house, too.  I used Ore-Ida's frozen Potatoes O'Brien - they come with the onions &amp; peppers already in with the potatoes. One pound of sausage is plenty...I just get the bulk sausage at the butcher - crumbles so easily...

This was a bit too greasy for my taste. 

First time making this, I added 1 red pepper, 1 green pepper, and 1 yellow pepper. I also added 1/2 yellow onion and diced 1 medium jalapeno pepper. I wanted some vegetables and these together came out really great! Next time I want to add some avocado and slightly more hash browns.  

Brenda - or any of you -  can this be frozen? Or partially made and frozen? I need to know ASAP so I can have for Thanksgiving morning in 4 days.

Can I make this Thursday evening to be baked on Saturday morning?

I was searching for a breakfast casserole that I could assemble ahead, and just pop in to bake the next morning. I found this after reading many other recipes. But this one had all the basic ingedients I wanted to include. After reading such  great reviews, I did see a comment that confirmed it could be assembled the night before, and. Baked the next morning. I also so some great comments with some simple tweaks. My final mix up was 1 pound maple sausage, a 22 oz pkg of bacon that I baked in the oven. I used 8 eggs, 1 cup milk, 1 cup cream, and cooked the packaged hash browns with 1 chopped onion. I used 2 cups of cheese. Poured the milk mixture over, covered with foil. This morning I preheated the oven and baked it 45 mins. I have to say it was FANTASTIC! my husband and son (who came over to help husband with someting) had 2 healthy servings each and just raved about how good it was. I will say, fir someone who has some knee issues, it was a bit of time on the prep, but the ease of having it so easy to serve the next day made it well worth it. Will definitely make this again. And we have plenty left over for a care package for son to take home, and us to have breakfast tomorrow. I give this 5 yums! :-D

I use this recipe for our church sunday school, they are always earlier to eat breakfast when I fix this. Love love love.  One member always get 3 servings.  I sometimes put extra eggs and hashbrowns with extra milk to save money on the other products.

This is my recipe submitted to Southern Living and published back in the 90s.  I am happy that so many of you have enjoyed making it.  I only use one pound of sausage when I cook it.  I think the second pound was added by the SL test kitchen.
I have made a slight change recently you may want to consider.  Instead of one large 9x13 casserole, I made a number of small containers.  The one I have liked best is 6 inch cast iron fryers that I picked up at World Market.  Reduce the temp to 375 and cook for 30 mins.  This makes the dish more of a frittata (SP?) and looks great served with sliced avocados or other fruit, pico de gallo, and maybe a dollop of sour cream topped with sliced green onions.  I wish I could post a picture to show the results!  Happy cooking!

I substitute Jimmy Dean Maple sausage and reduce the milk a bit so it is not so soggy but it is always a hit. The maple sausage makes it so if you make that tweak I'd give it a 5 star rating.

This is a really good, solid casserole. I cooked my hash browns in two batches and that helped them stay crispy, but it did add an extra half hour to cook time. Maybe next time I will just get two pans dirty and cook simultaneously. Doing that much cooking before the casserole even goes in is kind of annoying, so I'll have to think of ways to save time when I make it again.

I made a vegetarian version of this, just removed the sausage and added finely chopped shallot and red pepper. Some of my friends like the veg version even better than the sausage one.

Fantastic! Used tater tots rather than hash browns and it turn out great.  Switch to broil for last three minutes to give a little crispness to the top.

I have made this casserole dozens of times for my family for dinner as well as breakfast and for teacher brunches. One consideration though is if you or your family members are a food texture person try using French fries instead of hash browns. When cooked well enough, fries stay crunchy and will not get as soggy in the casserole as hash browns do.The seasoned ones add an extra flavor kick too. You must bake and chopped them before adding. Other than that, this is a WONDERFUL go to recipe. Hash Browns or French Fries!!!

I made this for my Christmas brunch for the family and everyone loved it! My hubby ended up taking the leftovers to work for lunch! I thought it was a little top heavy with the meat (I used turkey sausage..one pack sweet and one pack hot) but it turned out great. Six eggs didn't seem like that much so I think I will use more next time. I used extra cheddar cheese. This blended in well with the hash browns. This is a hit of a casserole that will surely be used over again at our house!.

I plan on making this casserole tonight for tomorrow morning. I read reviews and Im hopeful it will be a success. Its Christmas I can't screw it  up. Merry Christmas!!!

Yes slodgrant, you can make it the night before. I've made it this way for Christmas morning for several years.  I do not prebake the hashbrowns. I purchase cubed hashbrown potatoes, top the potatoes with a bag of Trader Joes frozen peppers with onions, salt and pepper it all, stir in cooked maple syrup sausage links (chopped) and add a combo of cheeses ontop. Pour eggs and milk over all. Cover with foil and leave in the fridge until morning.

Going to make this for Christmas morning.....can it be put together the night before and then baked in the morning?

This is a good basic starter recipe for sausage and hash brown casserole.  I took the advice of other reviewers and made a few changes; I added 1 med. onion and 1 red or yellow bell pepper. I also increased the cheddar to 2 cups of sharp and decreased the eggs to 5 and the milk to 1 2/3 cup and the hash browns to a 16 oz pkg.  I will certainly make this again.

This dish was a BIG HIT last night for our "breakfast for dinner night".  I was only serving 4 people so I used 1 pound of sausage, half a bag of hash browns, 5 eggs (I wanted it to be a little more on the "egg-y" side) and 1 2/3 cup of milk and a cup of cheese.  I'll just say that everyone had seconds :)

As written the dish is mostly a sausage and potato casserole with almost no evidence of egg or cheese.  I used a single 1 pound bag of hash browns.  I kept the sausage and milk the same but double the eggs to 1 dozen and tripled the cheese, including a round of smoked Gouda.  Adding diced and sauteed onion (one large) and a red bell pepper, diced and sauteed in the pork drippings adds flavor and color.  It doesn't need any added salt or pepper.  Then it's spectacular!

I followed the directions exactly as written but only added a pinch of salt and pepper. With the sausage, it isn't needed. Not sure what happened but the cook time took an extra 15 minutes. Very good though!

This is a delicious breakfast casserole. It can be used for brunch when having guest over. It was easy to put together. Mine came out spicy because I used hot sausage and southwest hash browns. Next time I will only use one or the other.

I love this recipe and use it several times a month to feed a dozen men at a prayer breakfast. I double the eggs and add alittle onion and green pepper as I cook the sausage. The men love it!

Baked for the first time last night for dinner. Our family is very large. I am looking for recipes that help me prepare home cooked meals and are nutritious. The recipe will be easy to adapt to our preference. It was a thumbs up around our table last night. Reheated for breakfast was a success also.

I made this over the weekend for a church breakfast. Multiplied the recipe to feed 200 people. It multiplies very easily. We used large chafing dish pans, and the baking time was a little funky - I needed to bake for almost 2 hrs, but it's the equivalent of three pans in one. I used less sausage, and created a vegetarian version by leaving out the sausage completely. I didn't cook the hash browns prior, and purchased sausage crumbles from our food service provider - they're already cooked. Will definitely make again, even if it's just for the family. Next time, going to saute a chopped onion, some garlic, some mushrooms, and maybe even some fresh spinach. Will let all of that drain out completely, and then substitute ham for the sausage. I'm getting hungry!

I made this for the second time today and it turned out better than the first time.  I modified it to what I had on hand and will definitely add it to the Christmas/Easter brunch list.  I used one bag of shredded hashbrown potatoes and added onion when I pre-cooked the potatoes.  I also used only one roll of breakfast sausage and 5 eggs with 1 2/3 cups of milk.  The last time I made it I only used 4 eggs and it just wasn't enough.  This turned out SO good.

Excellent! Delicious and easy. I used bacon instead of sausage because that's what I had on hand and it turned out perfectly.
