Sauteed Beet Greens

Olive oil,

beet greens,

garlic,

red pepper flakes

lemon

salt and pepper

Heat a medium saute pan coated with oil over medium heat until the oil shimmers. Add the beet greens and garlic, and toss until the greens are wilted and tender, 5 to 8 minutes. Add the red pepper flakes and lemon zest and juice, and toss. Season with salt and pepper.

Just made this. Really delicious and simple. My husband is not a "greens" lover, and he ate these up. 

just made this.. excellent.. easy and delicious. I used 1 tbsp of oil and about 2 tbsp of no-salt chicken broth to use to sautée... I also used a mediums sized yellow onion and sautéed both onion and garlic... I didn't use the hot pepper flakes as I was using a spicy sauce on the fish I was making to go with it... so would use it  in future ... It was delicious... definitely a keeper... 

I had a single, very large bunch of beet greens, and used it as the two bunches in the recipe. The red pepper is perhaps a bit heavy (I like it, my mother does not), but the greens are delicious, and the stems remind me of bamboo shoots!

This recipe for beet greens was so amazing. I used only one bunch of greens and added a shallot with the garlic. Yum!
