Step 1

Add the eggs, oats, cream cheese or mascarpone into a blender and blend until smooth. We used the immersion blender and a bowl to do the blending.

Step 2

Then, chop the salami super thinly and shred some cheese. Add these to the egg mixture.

Step 3

Finally, heat a nonstick pan, grease with olive oil or whatever oil you like and make the pancakes. These pancakes are on the smaller side.

Step 4

Once the edges look done, flip and cook until golden brown.

Step 5

Transfer to a plate and enjoy with some vegetables on the side.
