Add baking mix and sugar to a large bowl . Using a pastry knife, cut butter into the mix until lumps resemble coarse meal (the butter can also be pinched in with your fingers). Add milk and stir together until moistened. Place dough on a floured work space and knead 5 times to form a ball. Form dough into an 8 inch circle, slightly domed in the center. Cut into 8 wedges. Place the wedges on a greased sheet pan, 1 inch apart. Bake in 400 degrees F oven for 10-15 minutes or until golden brown. Serve warm along with butter and a selection of jams and cinnamon honey. *If you choose to add dried fruit to the dough, allow the fruit to soak for 10 minutes in warm water. add into the kneading stage.
