Step 1
Place the potatoes in a large pot of salted water and bring to a boil. Cook for 15–20 minutes or until the potatoes are tender. Drain and set aside.

In a large skillet, melt 1 tablespoon of butter over medium heat.

Add the shredded cabbage and chopped onion, and cook for 5–7 minutes, stirring occasionally, until the vegetables are softened but not browned. Set aside.
Step 4
In the same pot used for boiling, mash the potatoes with the remaining 2 tablespoons of butter until smooth.

Fold in the cooked cabbage and onion mixture. Season generously with salt and black pepper to taste.
Step 6
Preheat your oven to 375°F (190°C).
Step 7
Transfer the potato mixture to a baking dish and smooth the top. Sprinkle the grated cheddar cheese evenly over the top.
Step 8
Bake for 20–25 minutes, or until the cheese is melted and bubbly with a golden crust.
