Step 1

Place lemon and Parmesan into mixing bowl and mill 10 sec/speed 9. Scrape down sides of mixing bowl with spatula.

Step 2

Add parsley and chop 5 sec/speed 7. Transfer mixture into a bowl. Add pine nuts to bowl, stir to combine and set aside until ready to use. Do not clean mixing bowl.

Step 3

Place leek and fennel into mixing bowl and chop 2 sec/speed 7. Scrape down sides of mixing bowl with spatula.

Step 4

Add butter and cornflour and cook 3 min/100°C/speed 2.

Step 5

Add sherry (optional) and cook 2 min/100°C/speed 2.

Step 6

Add water, stock paste, lemon juice, fish sauce, potatoes, thyme, bay leaf and bacon (optional) and cook 10 min/100°C//speed 1.

Step 7

Add seafood mix, corn and pepper and cook 7-10 min/100°C//speed 1 or until potatoes are soft and seafood is cooked. Serve soup sprinkled with Gremolata.
